I’m kind of a brat.
Phew, I’m glad we got that out of the way.
You see, for years I’ve been able to talk my husband into candy runs to Walgreens anytime the urge for a butterfinger or a bag of M&M’s hit.
2 kids later though, and all of a sudden, he’s not as willing to hop into the car and satisfy my cravings. It *might* have something to do with the fact that he is out the door by 6 AM each morning and doesn’t get a moments peace until after we put the kids to bed after 7pm.
I get it, I mean I really get it. However, when a chocolate craving hits, I’m not exactly rational about it. In fact, that is the one instance (well in my humble opinion) where I truly can turn into a brat.
One night I really wanted some candy. I begged and pleaded, but my husband just smiled and told me very kindly (he is the sweetest man) that he didn’t really feel like making a candy run. I, of course, did what any mature woman would do.
Finally, I took my craving to the kitchen to see what I could come up with. It wasn’t necessarily sweetness I wanted, so baking something or eating a bowl of cereal would not suffice.
I gazed through the dark depths of our well stocked pantry (which of course was devoid of any candy, candy does not stay long in this house), and my eyes landed on a bag of chocolate chips. Surely I could make candy with those, right? I mean they weren’t candy making melts…but they could get the job done. Now I just needed to figure out what to cover with chocolate….eureka!
Now I’m not a fan of plain ol’ raisins. I like grapes and I like raisinettes, but raisins are only in this house as snacks for my children.
I was desperate though. So I melted some chocolate and I stirred in some raisins and I started placing them one by one on a piece of foil. It took forever.
I chilled them in the fridge, but as I put them in I must have bumped the tray. Because when they come out, several of them were clumped together.
And that my friends, is how Chocolate Covered Raisin Candy Clusters were born.
***Chocolate Covered Raisin Candy Clusters***
- 1 cup Chocolate Chips (I use semi sweet, I suppose any would work)
- 1/2 cup Raisins
- Melt chocolate in the microwave. About 30-60 seconds always gets the chocolate warm enough and I stir it the rest of the way until it’s smooth.
- Dump raisins into chocolate and mix
- On a foil covered tray or plate, pick up small clumps (about teaspoon full) of the chocolate and raisin mixture and place them on the lined foil tray.
- When you are done, refrigerate for at least 20 minutes
Now, I doubt you will have any leftover, but if you do I recommend storing them in the fridge.
You could definitely get crafty with this recipe and try using nuts, coconut or whatever else comes to mind. You can also use candy melts for a more candylike finished product. However, there is something so awesome about whipping up a quick batch of candy from normal pantry items whenever the whim hits (and perhaps something dangerous as well!)
