Heart Healthy Olive Oil Butter

Here’s a recipe for a heart-healthy alternative to margarine and butter.

My husband’s cardiologist recommended this, and it is also recommended in The Omega Diet, by Artemis P. Simopoulos.

This margarine substitute is delicious, and so easy to make. You just mix equal parts of softened butter and olive oil.

::I usually set a pound of butter out the night before, and mix it in my food processor, blender or mixer.

::Pour the mixture into containers and store in the refrigerator.

If you don’t like the taste of Extra Virgin Olive Oil, you can use Light instead.

Also, you can substitute Canola Oil, heart healthy oil.

It’s a fun recipe you can really experiment with.  I like making cinnamon honey butter by adding a bit of honey and cinnamon to one of my containers. Let me know if you think of another way to change the recipe.
