I’ve never been a fan of boxed mixes. I enjoy making things from scratch! In my current season of life though, I simply don’t have time to make things from scratch. Which is so frustrating sometimes!
Over the weekend it was my son’s birthday. I made him my famous birthday cake pancakes, except I totally cheated! I made normal pancakes and just stuck some sprinkles in them as they were cooking (I did make the frosting as directed). Thankfully, he still loved them, but it got me thinking that it would be great if I could “make ahead” some mixes that would help me out in the kitchen.
This homemade baking mix seriously came together in less than 10 minutes, and 5 minutes of that seemed to be dedicated to finding a container large enough to store 10+ cups of baking mix!

Homemade Baking Mix

Ingredients:
- 10 cups of all purpose flour
- 1/2 cup baking powder
- 2 teaspoons salt
- 2 tablespoons white sugar
- 1 1/4 cup vegetable oil
Directions:
Mix dry ingredients together, then slowly add vegetable oil while using the paddle attachment on your mixer. If you do not have a mixer, you can use a pastry blender or a fork, work the flour/oil mixture until it is small uniform clumps.
