
This week, I sat down and for the first time in a LONG time, I wrote out a menu plan.
Now, I know that I always preach about menu plans. They are a HUGE money saver and honestly they are also a huge SANITY saver! My life has just been in upheaval since late August though, and to be honest, I simply fell out of the routine.
However, I’m REALLY trying to hit a weight loss goal by the time I turn the big 3-0 next year, so I really need to start being more accountable and *cough* eating at home more often *cough*. I also was inspired by this great new meal planning website I found called Food on the Table.
I’ve never made a secret about my love for eating out. What’s not to like? My husband is not a big cook (read: a cook at all) so if I want something to eat, who do you think has to make it? That’s right…ME! So I enjoy a break every now and then where someone ELSE does the cooking!
I also know how much my readers adore new recipes and I really want to post more then just one recipe a week on FFF (which is about the frequency I currently post recipes). Meal planning, cooking from scratch and couponing are the best ways to cut costs for families. Hopefully getting into a habit of meal planning and posting my menus/recipes once again will help others, but I also know how much it will help my own family.
My kids go to school 5 days a week for a few hours, so breakfasts are generally pretty quick around here. Typically: Pancakes, waffles, cereal & fruit.
Lunches are also brown bagged: leftovers, sandwiches, fruits, crackers, small treats, salads (yes my kids love salad w/ ranch dressing!)
So here are our tentative dinners for the week:
- Salmon Croquettes w/ brown rice and asparagus
- Cheese Enchiladas w/ black beans & salad
- Chicken Cordon Bleu w/ zucchini (still not sure how I plan to prepare the zucchini?)
- “Fried” Chicken w/ mashed potatoes & green beans
- Steak Fajitas w/ grilled onions & peppers
ALL of these recipes are new to me. I know, I’m starting off with a bang! ;)
They also are mainly “healthified” versions.
I hope to be able to share a few of these recipes with you throughout the coming weeks, but rest assured, if they are bombs…you won’t see them posted here on FFF!
If they are fabulous though, I’ll share them with you and also let you know any adaptations we made (as well as the source of the original recipes so you can try them out for yourself!).
