Snickerdoodles. It is basically absolutely everything a cookie should be. Crispy on the outside, soft on the inside, sweet but not TOO sweet, with a hint of cinnamon spice. Oh bliss.
The best part is, they are really super simple to make. You can make the dough in advance (in fact, I suggest you do!) and pull them out just to bake them as needed so you always have warm and tasty Snickerdoodles on hand! Nothing beats a warm snickerdoodle…nothing!

Simple and Scrumptious Snickerdoodle Cookie Recipe

Ingredients:
- 1/2 cup unsalted butter (softened)
- 1/2 cup sugar (plus 1/4 cup of sugar for rolling)
- 1/3 cup light brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 1/2 cups all purpose flour
- 1/4 teaspoon cream of tartar
- 1/2 tsp baking soda
- 2 1/2 teaspoons cinnamon (plus 1 tsp cinnamon for rolling)
- 1/4 tsp salt
Directions:
1. Cream butters and sugars together until mixed thoroughly.
2. Add egg and vanilla and mix thoroughly
3. Mix your flour, cream of tartar, baking soda, cinnamon and salt in a separate bowl.
4. Slowly add the dry ingredients to the wet ingredients.
5. Roll the dough into 2 inch balls and slightly flatten them with your fingers.
6. Refrigerate dough for at least an hour.
7. Preheat oven to 350 degrees
8. Mix sugar and cinnamon for rolling together and roll each piece of dough in the mixture before setting on a slightly greased baking sheet.
9. Bake cookies for 8-10 minutes until just barely browning.
10. Cool on a wire rack

These are so tasty! You will love them and you will definitely want to gift them to everyone you meet! The dough will keep in the fridge for a few days, but if you are going to go longer, go ahead and freeze them in an airtight container or baggie.
