Who doesn’t love buttermilk biscuits? Who doesn’t love EASY Homemade Buttermilk Biscuits?

I’ve made biscuits on this site before, these Red Lobster Copycat Biscuits, but these biscuits are even EASIER. If you start off with my homemade biscuit mix, you can seriously have these on the table in less than 15 minutes. Crazy! Biscuits for dinner every night! Okay, maybe not EVERY night.

This recipe is so simple. I mean, I feel silly typing it up!

Simply take 2 1/2 cups of Homemade Biscuit Mix, stir in a pinch of salt and add 2/3 cups of buttermilk. Knead until fully incorporated and drop on a greased pan. Bake for 8-10 minutes!

*NOTE* These biscuits are not made with shortening, so they aren’t *true* Southern biscuits. You could have fooled my tastebuds though! They taste awesome and you can’t beat how quickly they whip up!

Homemade Buttermilk Biscuits (from DIY Baking Mix)

Ingredients: 

  • 2 1/2 cups Homemade Baking Mix
  • 2/3 cup buttermilk (make your own by adding just shy of a tablespoon of white vinegar to whole milk)
  • pinch of salt

Directions: 

  1. Preheat oven to 450 degrees
  2. Scoop 2 1/2 cups Homemade Baking Mix into a bowl and stir in a pinch of salt
  3. Add buttermilk and stir until fully incorporated.
  4. Knead no more than 10 times (don’t overwork the biscuit dough or you will end up with hockey pucks instead!) and place on a greased baking sheet for 8-10 minutes

Make Your Own Homemade Baking Mix

 

I’ve never been a fan of boxed mixes. I enjoy making things from scratch! In my current season of life though, I simply don’t have time to make things from scratch. Which is so frustrating sometimes!

Over the weekend it was my son’s birthday. I made him my famous birthday cake pancakes, except I totally cheated! I made normal pancakes and just stuck some sprinkles in them as they were cooking (I did make the frosting as directed). Thankfully, he still loved them, but it got me thinking that it would be great if I could “make ahead” some mixes that would help me out in the kitchen.

This homemade baking mix seriously came together in less than 10 minutes, and 5 minutes of that seemed to be dedicated to finding a container large enough to store 10+ cups of baking mix!

I’ll be using this for basically everything you can use Bisquik for! Stay tuned for future recipes.

Homemade Baking Mix

Ingredients: 

  • 10 cups of all purpose flour
  • 1/2 cup baking powder
  • 2 teaspoons salt
  • 2 tablespoons white sugar
  • 1 1/4 cup vegetable oil

Directions: 

Mix dry ingredients together, then slowly add vegetable oil while using the paddle attachment on your mixer. If you do not have a mixer, you can use a pastry blender or a fork, work the flour/oil mixture until it is small uniform clumps.

How To Make Homemade Mayo…for Mayo Lovers ONLY (Mayo Haters Might Want To Steer Clear)

I am not ashamed to admit that I love mayo. 

I know not everyone does, and if you don’t love mayo (and aren’t willing to try to learn how to make homemade mayo to see if you MIGHT just like that better)…you should probably go back to the home page and find something that doesn’t involve this particular condiment.

HOME.

Okay, so now I’m going to presume that EVERYONE left likes mayo. Right?

Let’s proceed!

Look at this:

It’s homemade mayo. I found the recipe for how to make homemade mayo here.

Basically it involves:

♦ An Egg Yolk

♦ Vinegar

♦ Lemon Juice

♦ Salt

♦ Dijon Mustard

♦ Patience

Yep, want to learn how to make homemade mayo? Better have patience. 

OR alternatively, you could just use the whisk attachment on your Kitchen Aid:

You’ll still have to “whisk” just as long, but the machine does the heavy lifting!

If you happen to own a whisk though (I honestly don’t. Isn’t that absolutely ridiculous? Anyone want to buy me a whisk?), and need a good arm workout, make this mayo and consider yourself gold for the day.

Homemade Applesauce (With A Twist!)

What do you consider Fall weather?  After the scorching summer we have had in Texas, I was getting the Fall decorations out when the temperatures dropped into the low 90’s! Today, the high was in the 70’s and we are wearing sweaters. 😉 This kind of weather makes me want to pull out all of my “cold weather” recipes.  Since I found apples on sale last week, I had to start with applesauce.  This is a very kid friendly recipe.  My daughter was making it, with apples that I peeled and cored, when she was 8 years old.  It’s a Fall tradition  at our house.  Let me know what you think.

Homemade APPLESAUCE (with a twist!)

Ingredients

  • 8 – 10 medium apples (you can use more or less – it really doesn’t affect the recipe too much)
  • 1 bag Red Hot candies (or several boxes if you can’t find a bag)
  • 1 cup water

Directions: 

Peel and core apples, then chop them into fairly small pieces.  Put in crock pot, top with Red Hot’s and a cup of water.  Cook on low for about 8 hours.  We like them in large chunks, but you can mash them with a potato masher or spoon them out of the liquid and put them in the blender to make a saucier consistency.  If you like wassail or spiced cider, try dipping some of the juice into a mug.

It is delicious!
