This slow cooker or Instant Pot sweet potato casserole recipe frees up your stove and oven for other things! You will not regret making this. This sweet potato casserole recipe will make even the sweet potato HATER in your family fall in love!

A few years back my sister in law made a sweet potato casserole dish that knocked my socks off!

This was pretty remarkable because I’ve NEVER been a fan of sweet potato casserole.

Ever.

I’m not a marshmallow fan (unless it’s in Rice Krispy treats) and was only a moderate sweet potato fan in general.

These were so tasty though!

I found out later that they are tasty because half the dish is actually sugar 😉 . It’s Thanksgiving though, so I say…live  a little! It’s more “dessert” tasting than side item, but who doesn’t need a bit more sweetness in their life?

This recipe is actually inspired by Reba McEntire’s Sweet Potato Casserole with just a few tweaks from me.

Tasty Sweet Potato Casserole

Ingredients: 

  • 3 large sweet potatoes (soften them in the microwave and peel and cube them)
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/3 cup granulated sugar
  • 1/4 cup butter, melted

***Topping***

  • 1/4 cup butter, melted
  • 3 tablespoons flour
  • 3/4 cup brown sugar
  • 1/4 cup pecans, chopped

Directions:

  1. Place the cubed sweet potatoes in the slow cooker with the salt, vanilla extract, cinnamon, granulated sugar and butter.
  2. Mash the potatoes as well as you can and stir it all together.
  3. Cook on low for about 2-3 hours
  4. Mix the topping ingredients and add the topping about 30-45 minutes before you plan to serve.

Enjoy!

Tip: To make this in the instant pot, you would use the “slow cooker” function.

  1. That recipe sounds like I need to go to the store and get some sweet potatoes and try this. It looks delicious. One question: heating the potatoes in the microwave..Long enough to cook it until it is just soft or all the way soft?

    1. I cooked until all the way soft. I wanted them the consistency of the canned sweet potatoes so they needed to be pretty soft. Just be sure not to over microwave them!

  2. So.so.delicious. I made this for Thanksgiving and it was my favorite part! Right up there with turkey and stuffing. I loved it so much, I’m making again right now for Christmas dinner. Mmmmm 😀

  3. How long do you microwave the sweet potatoes for before they are soft. I’ve never microwaved sweet potatoes before. Tnx.

    1. it really varies based on size. However, I tend to use the baked potato setting on my microwave. If they need a bit more time (because sometimes they are huge!) I’ll just add a a few minutes. HTH!

  4. I have made this type of casserole a bunch of times, but never in the slow cooker before. I’m going to try it out this way for my family’s get-together, but I did want to remark on one thing — the topping seems to have an incredibly high suger-to-pecan ratio. Could that possibly be a typo? 3 times as much sugar as nuts just seems like a little…. much…

  5. I made these 2 weeks ago for our church Thanksgiving feast and they were a hit! Multiple people told me how much they enjoyed them. I’m making this dish again to bring to my inlaw’s for Thanksgiving dinner. I’ve always loved sweet potato and pecan casserole…and being able to do it in the crockpot makes my life so much easier.   6. Hi…. I’m thinking that I have a can of YAMS and was wondering why I couldn’t just sub those in this recipe instead. Do you think it would turn out just as good?

    1. I have never had yams, but I assume they are typically made in the same manner as sweet potatoes? I would say it’s worth a shot! Let us know how it goes!

  7. This was a huge hit at Thanksgiving! I actually baked my sweet potatoes the day before, then peeled and mashed them before adding other ingredients. I put the sweet potato mixture in the crockpot the day before Thanksgiving. I also put together the topping the day before. On Thanksgiving Day, I simply put the topping over the top of the mixture in the crockpot and heated all of it on low for about 45 minutes. Delicious and easy to prepare in advance! Thank you for the great recipe!!!!

  8. I also nuked my potatoes all the way done the day before. At some point I peeled & mashed & added the remaining ingredients. I didn’t use the crock pot since we were traveling to the kids for turkey day. I put the potatoes in a casserole dish, mixed the topping & added and forgot about them until about 45 mins before dinner. Popped them in the oven until they were heated through and the topping was bubbley. Even the ones who swear they don’t like sweet potatoes loved this dish. Enough so that I was “demanded” to make them again for Christmas dinner. What an easy and wonderful dish…and one that I’ll no doubt be required to make for years to come! Thanks!!

  9. Try using Stevia, raw honey, or pure maple syrup instead of sugar. You can cut the amount of sweetener by a 1/4 and it still tastes awesome! I also doubled the pecans. My kids love this dish.
