I LOVE Spinach. This creamy spinach is unbelievable. Whether you are keto/low carb or you just appreciate a good spinach dish, you will LOVE this recipe. I could have likely eaten this whole pan by myself. It is incredibly rich though, so a little goes a long way.
This thickens up quickly. If you want to thin it out, use some milk, but be careful it could get too thin very quickly.

Creamy Parmesan Spinach Recipe – Keto/Low Carb
Ingredients
- 2 Tbsp butter
- 1/2 cup diced onion
- 1 (10 oz) bag of fresh spinach
- 3 oz cream cheese
- 1/2 tsp garlic powder
- 1/4 tsp ground nutmeg
- salt & pepper to taste
- 1/4 cup Parmesan cheese
Directions:
- Melt your butter in a large skillet; cook your onion in the butter until translucent.
- Add your spinach a bit at a time until it fully wilts.
- Add all ingredients except for Parmesan cheese and cook through until the cream cheese is melted
- Once everything is melted, add Parmesan cheese and serve immediately.
