Sausage and Peppers Recipe – Instant Pot, Ninja Foodi or Stove Top/Slow Cooker Friendly!

A simple and tasty sausage and peppers recipe that can be scaled up or down to feed a crowd or just a few. Very versatile and comes together quickly and easily! This recipe for sausage and peppers can be made on the stovetop, in the Instant Pot or in the Ninja Foodi.

My family likes to switch things up for Christmas. Some years we’ll do a more traditional Christmas dinner. Some years Mexican food and some years (maybe my favorite years?) we’ll do Italian food!

This year, I wasn’t sure what to make. My favorite items were already spoken for (lasagna and spaghetti!) and I knew that whatever I made had to be able to travel well, sit out possibly for a bit (when we say we eat at 6…that usually means 7), and feed a large crowd (my family Christmas usually has well over 25 people).

I love Sausage and Peppers and it scales very well for a crowd! It’s also incredibly flexible and easy to make. You can easily half this recipe for sausage and peppers if you are just cooking for your immediate family. You can also opt for spicy italian sausage, opt for turkey sausage, and you could also make this entire recipe in your instant pot or Ninja Foodi if you want!

Because I was making sausage and peppers for such a large crowd, it was easier for me to do the sauteing of veggies and sausage in a large pan on the stove, but when I make this just for my small family, I do the whole sausage and peppers recipe in the instant pot using the saute and then the slow cook feature.

Be sure to taste this and play with the seasoning! Add more Italian seasoning, more salt & pepper, some red pepper flakes if your family likes things spicy, etc. Let me know how you adapt this sausage and peppers recipe!

The other day I found myself at 6pm with nothing defrosted for dinner and no plan. I usually have something in mind, but in the midst of record breaking heat in Texas, literally nothing sounded good.

I needed something easy and I needed something that would NOT heat up my kitchen.

I scrounged up a sausage link (just a super ordinary HEB sausage link!) and some rice and threw this yummy dish together within just a few minutes. It was definitely a WINNER!

You could add canned beans to this if you want. I would wait until after it cooks and then just stir the beans in. They should heat through quickly.

Cabbage with Turkey Sausage Recipe

[related_posts_by_tax posts_per_page=”3″]

Cabbage is one of those veggies you either love or hate. I happen to love it!

Typically, I prepare my cabbage with bacon in a skillet. Fry up the bacon (bacon makes everything better) and then cook the cabbage in the bacon fat. YUM.

It’s hard to top cabbage in bacon, but I also enjoy having cabbage with turkey sausage. This recipe is very filling and actually could be a stand alone meal (you might want to pair a carb with it).

I made my cabbage in my Instant Pot (using the sautee feature) from start to finish. My SIL was coming over and I knew I would need to keep it warm. So I cooked the cabbage in the Instant Pot and then threw the lid on it to keep it warm!

This recipe can be made on the stove in a large pot as well.

Make this with my Black Eyed Pea and Avocado Salsa for a great New Years Day feast!

Italian Sausage Soup: A Hearty & Wholesome Soup You’ll Love

Want to bookmark this recipe? Pin it!

I’m a big fan of soups.

I like my soups hearty with a bit of meat, a bit of veggies and a bit of starch.

This soup has it all.

Sausage, potatoes, beans, onions, spinach…mmmm good!

The best part about this soup? It’s totally a one pot meal!

The second best part about this soup? It includes BACON!

Sold? I thought you would be. 😉

Italian Sausage Soup

Source: Tablespoon.com**(see note)

Ingredients:

  • 2 slices bacon
  • 2 large russet potatoes cut into chunky cubes (about a 1/2 inch size cube)
  • 1/2 lb Italian Sausage, casing removed (my sausage was Chicken Italian Sausage. It had mozzarella in it, which might have made my soup just a tad bit more awesome)
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian Seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon red pepper flakes***
  • 1 carton low sodium chicken broth (32 oz)
  • 4 cups spinach
  • 1 can cannelloni beans (15-19 oz) washed and drained
  • 1 cup half and half (I didn’t have half and half. So I did half a cup heavy cream and half a cup of milk. Worked fine)

Directions:

  1. In a large deep pot, cook your bacon until crisp. Remove from pan and don’t eat it! Seriously…don’t. Crumble it and set it aside.
  2. Crumble sausage and cook until browned in the same pot. Remove from pan and set aside. (you might want to drain your sausage. I didn’t, and as you can tell from the picture above, the soup had a bit of grease in it. Which is not a huge deal, but next time I’ll be sure to drain and pat down the sausage after cooking)
  3. Now throw your onions, potatoes, garlic, Italian seasoning, salt, pepper and red pepper flakes into the same pot. Pour the chicken broth on top and bring to a boil.
  4. After bringing the pot to a boil, take the temperature down to a simmer and cook for about 10 minutes.
  5. Add crumbled bacon, sausage, spinach and beans to the pot and cook for 10 more minutes or until potatoes are cooked through (took me about 15 minutes)
  6. Just before serving, add half and half and cook just until heated through.

**Note: the original recipe asks for a lot more liquid than my version and also subs in kale for spinach. I like my version better, but feel free to check out the original as well!
***The kids weren’t HUGE fans of this soup. I eyeballed the red pepper flakes and might have put a bit more than 1/4 teaspoon in. It was a bit hot. It was fine for me and my husband, but if you have kiddos eating it, you might want to cut back or just put the red pepper flakes on your individual bowl instead of in the community pot.

This soup was so yummy and comforting and even better the next day!
