Potatoes. I will eat potatoes in ALL the ways.

In fact, I’m not sure there is a way that I don’t enjoy to eat potatoes?

However, this way, the way I am about to tell you all about, might just be my FAVORITE way (well…after my famous mashed potatoes of course).

Breakfast potatoes!

Traditionally, these bite-sized pieces of fried potatoes are saturated in a healthy (?) dose of oil. You pour the oil in the frying pan, heat it up and the goal is for the oil to basically *just about* cover the potatoes while they are in the pan.

Yum.

I still love breakfast potatoes prepared this way. It’s still my favorite.

However, I have now found a way to make *almost* the identical breakfast potato recipe that has been my guilty pleasure basically my whole life in the air fryer!

I have a Ninja Foodi, so my directions will be focused on the Ninja Foodi, however, you can make these breakfast potatoes with any air fryer!

I hope you give these air fried breakfast potatoes a shot. I bet they will be a family favorite for you as well.

Homemade Air-Fried Breakfast Potatoes Recipe

Ingredients: 

  • Potatoes (I usually do 4-5 for my family) peeled and cut into bite-sized pieces
  • a bit of oil (I usually use olive, vegetable will do just fine though)
  • desired seasonings (I use salt, pepper, garlic powder, and paprika)
  • 1/2 an onion diced

Directions: 

  1. The very first thing I typically do is pressure cook my potatoes for one minute. You do NOT need to pressure cook your potatoes. You can boil them for a bit or before you peel them, you can “bake” them just enough so they are slightly soft. This cuts down on air frying time so that your potatoes are basically just air frying to get crispy.
  2. Next, I add my diced onions and season my potatoes pretty heavily and drizzle a bit of oil on them so the seasoning “sticks”. You will need to do this to taste. I measure seasonings on breakfast potatoes with love 😉
  3. Once the potatoes are softened (either via pressure cooking/microwaving/boiling) and seasoned, I air fry these babies at 400 degrees for approximately 20 minutes (your air fryer might do this faster or it might take more time, just keep an eye on it), tossing every once in a while.
  4. Voila! Enjoy! Perfectly crispy and tasty air-fried breakfast potatoes that taste just as good as the good old deep fried version!

Ninja Foodi Specific Directions: 

  1. Pour 1 cup of water into the big ninja foodi pot.
  2. Add your potatoes and onions into the air fryer insert and season heavily. Toss seasoned potatoes with a drizzle of olive oil.
  3. Close your Ninja Foodi and set to pressure for 1 minute
  4. Quick-release your ninja foodi when the 1 minute of pressure is up.
  5. Remove the air fryer basket and pour out the water.
  6. Air fry the potatoes for 20 minutes on 400, tossing a few times throughout.
  7. Enjoy!

I have been making this Low Carb Cheesy Chorizo Breakfast Casserole for a couple of  years now. We love to make it on Sunday and then reheat the pieces for breakfast throughout the week.

  • 2 tbsp butter
  • 4 oz onion, thinly sliced
  • 2 large cloves garlic, minced
  • 9 oz pork chorizo

  • 2/3 cup sharp cheddar cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 4 oz cream cheese
  • 4 oz cremini mushrooms, sliced (we don’t use these because my husband does not like mushrooms. I wish he did though!)
  • sea salt and black pepper, to taste

Make Ahead Steel Cut Oats – Just Heat and Eat All Week Long!

Breakfast is one of my favorite meals.

To eat for dinner.

Don’t get me wrong, I love breakfast at any time of the day but a really good home cooked breakfast is usually just not possible on most mornings. Therefore, I often either skip breakfast, drink my breakfast (in the form of a protein shake) or eat something convenient and quick.

It’s even worse during the winter months. When it is hot out, I can easily get away feeling good with some fruit and yogurt. When it is cold outside, I really crave something warm!

This oatmeal is perfect because with just a bit of weekend prep, you can have heat and eat healthy comfort food all week long!

I used steel cut oats from Sam’s Club, but you could use any steel cut oats. I have not tried this with old fashioned oats, but I’m sure it would work, you might want to tweak the liquid ratios a bit? (Let me know if you try it!)

Make a pot of this on Sunday and you could stretch this a full 5 days! (although this recipe as stands technically makes 4 servings…they are BIG servings).

 

Make Ahead Steel Cut Oats – Just Heat and Eat All Week Long!

Ingredients: 

  • 1 cup Steel Cut Oats
  • 1 tablespoon butter
  • 3 cups boiling water
  • 1/2 cup milk
  • 1/2 cup buttermilk (make your own buttermilk with 1/2 cup milk and 1/2 tablespoon lemon or white vinegar. Stir and let sit 5-10 minutes)
  • pinch of salt
  • brown sugar (to taste…I usually add 1 tablespoon to the pot and I also add a bit to my bowl after I heat it up each day)
  • cinnamon (to taste)
  • 1 tsp vanilla extract

Directions: 

1. Set your 3 cups of water to boil either on the stove or in the microwave in a microwave safe container.

2. Meanwhile, you are going to toast your oats by first melting the butter in your pot and then adding your oats. Toast the oats for 4-5 minutes until they start to smell a bit “nutty”.

3. Add the boiling water to your toasted oats and give the oats one quick stir to get things moving. Now lower the oats to a simmer and let sit for 20-25 minutes. Do not stir.

4. When your oats have soaked up most of the water (keep your eye on it, this is where they can stick/burn), combine your 1/2 cup of milk and 1/2 cup of buttermilk and stir into your oats. Cook for about 10 more minutes.

5. Add your pinch of salt. Add your brown sugar, cinnamon and vanilla extract.

6. Store in an airtight container in the fridge. I like to cut the portions the first day with a knife so I can easily see how much I need to serve myself each day.

7. Reheat in the microwave. This is where you can get creative! After I heat in the microwave, I like to add a bit more brown sugar (usually just a sprinkle, the amount pictured is way more than I usually add…I just wanted it to show up in the picture!) and give it a drizzle of honey. I also sometimes add a bit more milk.  You could add fruit, maple syrup, whatever you want!

I remember the first time I had Monkey Bread. It tasted sooo good and I was so surprised to find out how easy it was to make!

If you’ve never had Monkey Bread, the basic recipe for monkey bread is just biscuit dough with sugar and butter that is baked up into a sweet and fluffy breakfast dish (find more breakfast recipes here).

I was flipping through a new cookbook of mine recently and I saw this clever recipe for monkey bread that added a filling inside each biscuit and I knew I wanted to try it out.

Here’s what you’ll need for this ooey gooey recipe for Monkey Bread (with a Surprise!):

Recipe for Monkey Bread: An Easy Monkey Bread Recipe!

Adapted from Gooseberry Patch Big Book of Home Cooking

Recipe for Monkey Bread Ingredients:

  • 2 refrigerated biscuit cans (each with 10 biscuits)
  • 8 oz of cream cheese
  • 1/2 cup of white sugar
  • 1 tablespoon of cinnamon
  • 2 cups of brown sugar
  • 1 cup of butter

Recipe for Monkey Bread Directions:

1. Preheat your oven to 350. You’ll need a greased bundt pan for this dish, so go ahead and grease your bundt pan.

2. Mix together the 1/2 cup of white sugar and the 1 tbsp of cinnamon (from here on out this will be known as the “sugar mixture”)

3. Open up your biscuit cans and flatten each biscuit (I use the bottom of my half cup measuring cup for this!)

4. Place a 1/2 teaspoon of the sugar mixture on each biscuit.

5. Cut up the cream cheese into 20 cubes and place ONE cube on each biscuit.

6. Meanwhile, melt the butter and the brown sugar in a pan on the stove on low heat, stirring occasionally.

7. Fold the biscuit dough up over the cream cheese, being careful not to let the sugar mixture fall out. Roll these into balls. (so the cream cheese/sugar mixture will be inside of the ball)

8. Place half of the biscuits on the bottom of your greased bundt pan. Top with 1/2 of the sugar mixture and half of the butter/brown sugar mixture. Repeat this pattern for the other half of biscuits.

10. Bake at 350 degrees for 30 minutes.

11. Take your Monkey Bread Surprise! out and let it sit on the counter for 5 minutes. Then flip it out onto a plate (if you’ve never done this, it’s easy. Take a plate wide enough to cover the entire opening of the bundt pan and place it on top of the open side of the bundt pan. Hold the plate firmly against the bundt pan and flip the whole thing over so the plate is on the bottom. Lift up the bundt pan and your Monkey Bread Surprise! will be on your plate!)

Dig in! Tell them it’s Monkey Bread, but watch how surprised they’ll be when they see the sweet creamy middle! Yum.

Yummy in the Tummy Apple “Cupcake” Muffins

This morning, I knew the moment I woke up that I had made a mistake.

A big mistake.

I remembered the previous night, we went to go get Noah a much needed haircut. I grabbed my keys, Colin grabbed his keys and we rushed out the door (in the D-A-R-K…at 6:00 PM…this time change is going to take some getting used to) and headed on our way. Now, since we were driving in the same vehicle, there was hardly a good reason for BOTH of us to have our keys, so I dropped my keys into the center console.

USUALLY, I drop my keys in my purse. My purse always comes inside with me. The center console? It’s kind of like socks and the dryer. Objects go in, but often don’t come back out.

As the kids hopped on me and jostled me awake this morning with their excited, “Mommy, we’re going to school today!” and “Mommy, I can’t wait to play with my friends!“. It dawned on me.

I never grabbed my keys out of the center console. The car was definitely locked. I remembered Colin double checking that it was locked.

Colin had my spare key…at work.

We weren’t going anywhere today.

As I told my children they’d be stuck with me all day (sheesh, you’d think I told them that we were bypassing Christmas this year), they showered me with Mama Guilt (my kids are good at that. Are yours?).

I knew a morning of cold cereal and/or toast wasn’t going to cut it for breakfast, so I decided to bake them something. I have an overabundance of apples right now, so I decided to try out these Apple Muffins. Now I have posted an Apple Muffin recipe here on FFF in the past, but it required more applesauce then I had on hand and to be honest, I wanted a fluffier muffin (okay and a better picture).

So without further ado…here is the recipe for Apple “Cupcake” Muffins (oh…real quick. We call them “cupcakes” because our kids don’t eat muffins. I’m not sure what it is about that word they don’t like, but call it a muffin and they won’t take a bite. Call it a cupcake and they are all over it!)

Apple “Cupcake” Muffins

(adapted from the Southern Plate Cookbook)

Ingredients:

  • 1 1/4 cup self rising flour (make your own by adding 1 1/2 teaspoons baking powder and 1/2 teaspoon salt)
  • 3/4 cup sugar
  • 1/4 cup quick cooking oats
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 2 eggs
  • 2 cups peeled, cored and chopped apples (any kind will do)
  • 1/2 cup applesauce
  • 1/4 cup vegetable oil
  • 1 1/2 tablespoons water

Directions:

  1. Preheat your oven to 400 degrees. Prepare your muffin tray by adding in your cupcake liners.
  2. Mix the flour, sugar, oats, cinnamon & nutmeg together in a bowl.
  3. Beat your eggs and then add your apples, applesauce, oil and water and stir together until incorporated.
  4. Slowly add your flour mixture to your wet mixture and stir until just moistened.
  5. Start spooning your batter into the cupcake liners. Mine were filled just about to the top. They do puff up a bit, but mine didn’t spill over at all.
  6. Bake for about 20 minutes. The tops should be slightly brown
  7. Let cool and enjoy!

The kids adored their cupcakes. They each ate 2! I ate one and thought it was pretty filling with the oats added in. Next time I think I’ll make them with all wheat flour and I’ll also add in some flax. This seems like a pretty versatile/quick & easy recipe!

My Morning Juice Recipe – 4 Veggies + 2 Fruits = Tastes Like Apple Juice!

I recently purchased a juicer (this Breville Juicer) and I’ve been enjoying trying out different recipes.

I admit, I’ve been nervous about everything tasting like pureed celery, but luckily I’ve found that a green apple makes ALL the difference! I love Granny Smith apples and any juice I’ve included one in so far has been awesome!

Here’s what I put in my juice this morning (inspired by the documentary Fat, Sick and Nearly Dead currently available on Netflix instant streaming!) …I have a feeling this might be my daily breakfast juice from now on!

  • 1 carrot
  • 2 stalks celery
  • 1 Green Granny Smith Apple
  • Handful of Baby Kale
  • Half Lemon
  • Half Cucumber

This yielded a great deal of juice. I drank a bit before I took the picture actually.

The secret to making sure your greens (kale, spinach, etc) “juice” is to smush them in between the green apples I’ve found! Just ball them up and put them in between your green apple sections.

If you smell the juice, you can definitely smell the veggies. But I tend to not smell when I drink my juice so it just tastes like I’m drinking juice from a yummy Granny Smith apple.

There is a lower model of Breville from the one I use, but I really like the output of this Breville juicer. Yes it does take a bit to rinse all the parts, but I just do it as I’m drinking my juice and it’s no big deal (I’ve never let the pulp get old and caked on, so I’m not sure how that would be to clean).

Is juicing cheap?

No. Not really. Especially since you really want to buy organic produce for your juices.

However, I find I crave junk a lot less since I started drinking a glass or two of fresh juice a day. The less junk I crave, the less junk I buy. Hopefully it will even itself out in time.

They say the best investment you can make in life is to invest in your health because you and everyone around you will reap the benefits (including your children!), so I’m willing to make the investment!

Cinnamon Toast Recipe: A Special Good Morning Treat

This morning, I wanted to make something a bit special for the kids for breakfast. Every once in awhile I like to do something “treat like” for them. Usually it’s on special days (like the cake batter pancakes for my daughter’s birthday). Sometimes though, it’s just because I love them and want them to feel special!

It’s usually something I wouldn’t serve them everyday, and it usually is on the sweeter side!

This Cinnamon Toast Recipe is something that my husband’s Nana made for him when he was a little boy, and it’s very special to him.

I decided to make the kids some Cinnamon toast made using the cinnamon toast recipe my husband taught me.

Who was taught by his Nana 🙂 .

All you need is about 5 minutes and some cinnamon, sugar, butter & bread for this cinnamon toast recipe.

♥ Turn the broiler on in your oven.

♥ Lay some foil out on a baking sheet.

♥ Throw some slices of bread onto your baking sheet and add pats of butter (he said you shouldn’t spread it too much! You want some parts to be a bit more buttery. 😉 )

♥ Mix some sugar and some cinnamon together and sprinkle over the toast until it’s all covered thinly.

♥ Throw under the broiler until it browns and caramelizes!

♥ Take it out and serve (it will be hot so give it a couple minutes to cool!).

We don’t toast the other side of the bread for this cinnamon toast recipe.

Don’t ask why though.

I’m honestly not sure why, but I think it tastes better!

The kids GOBBLED it up!

They loved it!

Frugal Recipe: Easy Sausage Breakfast Casserole

During the week, we eat always have something quick for breakfast….cereal, frozen waffles, fruit, etc. On the weekends, I’m wanting something  special and savory!

This Easy Sausage Breakfast Casserole is my ‘go to’ recipe for something special, but easy! I put it together the night before, then just pop it in the oven first thing in the morning!

Easy Sausage Breakfast Casserole

Ingredients:

  • 6 slices of bread
  • butter
  • 2 cups half & half
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 lb. pork sausage, browned and drained
  • 1 1/2 cups shredded cheese
  • 6 eggs, beaten

Directions:

  1. Remove crusts from bread and butter on each side.
  2. Place bread in 9×13 inch glass baking dish.
  3. Spoon sausage over bread and sprinkle with cheese.
  4. Mix eggs, half & half, salt, and pepper, then pour on top of cheese.
  5. Cover and chill overnight.
  6. Remove from fridge 15 min. before baking.
  7. Bake uncovered at 350 degrees for 45 minutes.

Yes, it’s that easy! Now, I’m from Georgia, so I can’t have this Easy Sausage Breakfast Casserole without a side of hot, buttery grits!

As you can see, this casserole is really versatile.  Make it healthier by using turkey sausage, add some spinach, use milk in place of half & half, etc. Get creative and impress your family!

3 years ago today, I met my little girl face to face for the first time. I remember my eyes filling with tears as I gasped when I saw her sweet face. The emotions overwhelmed me and I instantly felt a rush of love and affection towards this tiny stranger who I’d felt kicking and squirming inside me just moments earlier.

It was a radically different experience in comparison with the birth of my son. When he was born, I loved him instantly, but I didn’t know what was to come, it was all a mystery.

My sweet boy taught me to be a mom and taught me what it felt like to earn and receive the love of a child. When Elizabeth came into this world, I knew the love and the laughter that awaited. I felt joy and elation at what the next years of our lives together would bring.

Today she’s 3 and I have not been disappointed for one minute. God could not have blessed me with a daughter that was more perfect and more perfectly imperfect in all the right ways. I’m honored to be her mom every single day.

In honor of my sweet girl’s birthday, I decided she needed a special breakfast! I saw these pancakes a few weeks back and I just knew I had to make them!

I woke up early to get them prepared (I actually mixed the dry ingredients the night before since I don’t trust myself with flour and other powdery ingredients first thing in the morning!) and was taking the very last picture (Hey I’m a blogger, it’s a requirement) as the kids walked out of their room and were greeted by Lizzie’s new pink scooter (pulled out of our gift closet. Both the scooter and the LaLaLoopsy doll were bought for under $20 combined!)  😉

These were tasty, and the kids LOVED them. I’m not a sweet breakfast eater, but the bit I did have was very tasty and enjoyable.

Definitely make these for the next birthday in your family! Any excuse to be a Rockstar Mommy, right? 😉

Cake Batter Pancakes

Ingredients for Pancakes:

  • 1 1/2 cups all purpose flour
  • 2/3 cup yellow cake mix
  • 1 tablespoon sugar
  • 3/4 teaspoon baking powder
  • pinch of salt
  • 2 eggs
  • 1 teaspoon of vanilla extract
  • 1-2 cups milk (mine needed closer to 2, but I started at 1 and added little by little)
  • rainbow sprinkles

Pancake Directions:

1. Mix dry ingredients (flour, cake mix, sugar, baking powder & salt…you can do this the night before if you can’t be trusted with flour in the morning 😉 )

2. Add wet ingredients and mix until fully combined. Start with 1 cup of milk and add more if necessary. I needed close to 2 cups. You want the batter to be a bit on the thin side but not watery at all. Just like typical pancake batter. According to How Sweet It Is, it seems to depend on what cake mix you buy how much milk you need.

3. Fold in sprinkles

4. Cook the pancakes like normal on a hot griddle or pan.

Ingredients for Glaze:

  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 tablespoon milk (to start)
  • sprinkles

Directions for Glaze:

1. Mix the powdered sugar, vanilla & milk together until it forms a glaze. You might need to add more milk.

2. Add sprinkles

3. Pour over pancakes!

This recipe made us 10 pancakes but some of my earlier pancakes were too big, so it could probably easily make 12.
